A Word From Your Host Lanni

Let me be honest, sourdough seemed like a fancy, frivolous time waster to me forever. I thought it was a fussy thing that needed to be coddled and given constant attention with only the most experience bakers having real success. Despite my better judgement, I started out to learn sourdough at the end of 2021, and boy am I happy I did! My first step was reading, watching videos and trying to wrap my head around the process. After a LOT of research, I mixed up my first batch of flour and water and waited patiently for my sourdough starter to take off. After a few weeks, I was ready to bake.

When I first started baking sourdough bread for my family, the bread made the schedule. The starter needed fed every 12 hours, I mixed the bread dough when the starter was at peak and followed the bread making timeline to a tee. Since then, with learning and understanding more about how the yeast function, I am now the one calling the shots! I have found a wonderful balance with my sourdough starter and my baking habits, and you can too!

It has been months since I have purchased a single wheat product from the grocery store. I make our bread, bagels, English muffins, soft pretzels, tortillas, pizza crust, crackers, pancakes, waffles, muffins and more, all from scratch in our kitchen. I never thought that would be me. I love to cook and ferment, but baking seemed to be a luxury that I just didn’t have time for.

In this workshop I want to share with you everything I have learned about sourdough starters and baking bread. This workshop will be a great overview of everything I wished I had known when I got started. Live in my kitchen, either in person or virtually, you can see how I manage my starter and my baking schedule and have fabulous results. This will be a full demonstration of creating and feeding a starter as well as mixing, shaping and baking a fine loaf of crusty sourdough bread.
