Bone broth is more than a staple in my kitchen. It is the foundation of most of my meals. It adds nutrition, depth of flavor and a silky, rich texture to dozens of dishes that I keep in my regular rotation. Soup, chili, stews, sauces, gravy and so much more. Bone broth is also what I’ve used to replace my morning coffee while pregnant and breastfeeding. Adding vital nutrients and amino acids to my diet while forgoing caffeine and still enjoying a warm cuppa to start my day.
Making bone broth can be an easy addition to your kitchen routine. Most of the cooking time is hands off. It freezes well so you can make a large batch and portion it out to have conveniently next time you need it. I started making broth in 2005 at a kitchen job I worked for a few years. The broth I learned to make then is very different from the broth I make today. After 16 years of research, and more importantly 16 years of personal experimentation, I have come to find a better way of doing things for me.
In this workshop, I want to share with you what I have found to be true about broth during my time of research and experimentation. I am sure, if you come and talk to me a few years from now, some of what I share will be replaced with new information. I know that constantly reevaluating what I believe to be true as new information comes in is the backbone of being an awake and real participant of this life and all it has to offer. This is where I exist and what I strive to do. Luckily, our conversation about all things food and food preservation related does not end when this workshop concludes! Bone broth has a place in folklore and history. It’s likely your grandmother offered chicken soup if you were feeling sick as a kid. If you are young, the soup she offered may have been in a Campbell’s Soup can. Overtime, as a society, it seems we have lost our knowing of the importance of real, slow cooked, nourishing foods. There is no way that healing comes in a can from a industrial food processing plant, but there may be something healing in the intention that grandma had regardless. It is my hope that we all find our way back to ancient traditions that kept people well for thousands of years.
